1 pound steak 2 tbsp butter 1 onion, sliced 1 tbsp flour 1 tsp tomato paste 1 tsp dijon mustard 1 tsp lemon juice 1/2 cup sour cream salt, freshly ground pepper egg noodles (If steak is particularly thick or tough, pound it thin.) Cut steak into thin strips about two inches long. Heat 1 tbsp butter in frying pan over high heat; brown beef in it for 2 minutes. Remove the strips of beef from the pan with a slotted spoon, leaving juices behind. Melt the remaining butter in the pan and fry the onion over medium heat for 10 minutes, until soft. Sprinkle over with flour and fry a few minutes longer. Add the beef, any accumulated juices, and remaining sauce ingredients; heat until bubbling. Serve hot over cooked egg noodles. |
