Shopping List:
1 1/2 lbs. ground sirloin
1 large sweet onion
white wine
gorgonzola
For relish:
1 1/2 tbsp. butter
1 large sweet onion
1 tsp. salt
1/4 cup white wine, divided in half
4 oz. gorgonzola (or other bleu cheese)
1 tbsp. flour
1/2 tsp. sugar
freshly ground pepper

For burgers:
1 1/2 lbs. ground sirloin
1 tsp. salt
1/2 tsp. freshly ground pepper
1/2 tsp. thyme
1/4 tsp. dry mustard

4 kaiser rolls
lettuce and tomato, if desired

Slice the onion very thinly and heat the butter in a large frying pan. Fry the onion with 1 tsp. salt, until the strands are soft and caramelized, deglazing twice with the wine during the cooking process. In the meantime, soften the gorgonzola cheese in the microwave. When the onions are cooked, sprinkle them with flour and cook a few minutes more. Reduce the heat to low. Add the cheese, sugar, and freshly ground pepper to taste. Leave the heat on only long enough to warm the combined relish through.

While the onions cook, mix together the ground sirloin, salt, pepper, thyme, and mustard powder for the burgers. Form the mixture into 4 patties and grill or fry them until they are medium-rare. Collect the drippings and mix them into to the relish.

Slice the rolls in half. Serve one half with a burger slathered in warm relish. Garnish the other side with lettuce and tomato, if desired.
