3/4 lb. mushrooms
1-2 cups red wine
1 1/2 tbsp. butter, divided
1 tsp sugar
1 tsp flour
4 sirloin steaks
salt and pepper

Slice mushrooms finely and place in medium saucepan, with enough red wine just to cover (about 1-2 cups). Bring to a bubble over medium-high heat, then reduce heat to low and simmer at least one hour, stirring occasionally. Add 1 tbsp. butter and 1 tsp sugar, and increase heat to boil off most of remaining liquid. Stir in 1 tbsp flour to thicken and return heat to low.

Heat 1/2 tbsp butter over medium-high heat in large metal frying pan. Trim steaks of excess fat, then generously salt and pepper. Fry steaks in butter, 5-8 minutes per side, depending on thickness and desired doneness.

When drippings collect in frying pan, remove and add to mushroom sauce. Salt sauce to taste and serve over steaks.
