bleu cheese
parsley
chopped walnuts
2 thickly cut sirloin strip steaks (about 1 1/2 lbs)
6 oz bleu cheese, crumbled
1/4 c butter, softened
2 tbsp chopped parsley
3/4 tsp rosemary, crushed
1/4 cup chopped walnuts, toasted
salt and pepper to taste

1 tbsp rosemary, crushed
6 garlic cloves
1 1/2 tsp salt
1 1/2 tsp ground pepper
2 thickly cut sirloin strip steaks (about 1 1/2 lbs)

Combine bleu cheese, butter, parsley, and 3/4 tsp rosemary and mix well. Stir in walnuts. Season with salt and pepper.

Combine 1 tbsp rosemary, garlic, and the measured salt and pepper in food processor. Process into coarse paste. Pat steaks dry and rub garlic paste on both sides. Let stand at room termperature for 1 hour. Then grill the steaks medium rare (about five minutes per side over medium-high heat). Serve topped with portions of the butter.
