collard greens
6 slices of bacon
1 jumbo onion, chopped
4 cloves of garlic
1 large bunch of collard greens
1 tsp. salt
1 tsp. pepper
3 c. chicken broth
2 c. water

Separate the collard leaves and wash them thoroughly. Remove the tough central stems and any wilted areas. Cut what remains into slices 1 in. wide and not more than 4 in. long.

In a large pot, fry the bacon until it is starting to crisp. Remove with a slotted spoon and drain on a paper towel. Once the bacon has cooled, coarsely chop at least 3 of the slices. (The others may be eaten separately). In the meantime, fry the onion in the bacon fat, for about 10 minutes, until the pieces are soft and begin to brown. Add garlic, and cook until just fragrant. Then add collard greens, and fry until they start to wilt.

Pour in chicken broth and water, and season with salt and pepper. Add back the chopped bacon and bring to a slow boil. Reduce heat to low, cover, and simmer for 1.5-2 hours. If necessary, add extra salt before serving.
