3 cups flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 3 tsp cinnamon 3 eggs 1 cup vegetable oil 2 1/4 cups sugar 3 tsp vanilla extract 2 cups grated zucchini (1-2 medium squash) Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F. Mix flour, salt, baking powder, soda, and cinnamon together in a bowl. Beat eggs, oil, vanilla, and sugar together. Mix in zucchini and then dry ingredients. Pour batter into prepared pans. Bake for about 80 minutes, or until tester inserted in the center comes out clean. (The cooking time may vary considerably, depending on the amount of moisture introduced by the zucchini.) Cool before serving. |
