pesto pacetta kalamata olives
1 lb. pasta 2 oz. pancetta, shaved 3 oz. prepared pesto (Trader Joe's or other) 2 tbsp. tomato paste 25 kalamata olives, halved
Cook pasta normally. Chop the shaved pancetta into small pieces. While the pasta is boiling, heat the pancetta in a small saucepan over medium-low heat, until the fat starts to melt. Mix in the pesto, tomato paste, and olives, and heat it through. Once the pasta is drained, toss it with the sauce.
