1 rack pork ribs (2 lbs)
2 tbsp yellow mustard
1 tbsp ketchup
1 clove garlic
1/2 tsp black pepper
1 tsp paprika
1 tsp chili powder
1/4 tsp smoke flavor
1/2 tbsp salt
1 tbsp brown sugar
3 tbsp apple cider vinegar

Heat oven to 500 F, and place the rack in the lowest position. Cut the rack in half, then clean the ribs of skin and excess fat. Score the remaining fat with a knife.

Mix all ingredients except the meat and cider vinegar to make a rub. Smear evenly over both sides of the ribs. Wrap the ribs tightly in foil, tightly cinched around the edges. Place the foil-wrapped ribs in a large baking dish and bake for thirty minutes.

Remove the pan from the oven. Lower the temperature to 250 F, and leave the oven door open for one minute so heat can escape. Open up foil packets and add vinegar, then reseal them. Bake for about 1 1/2 hours more, until the meat is fall-off-the-bone tender. (Start checking for doneness at after about one hour.)
