mushrooms ground chicken or chicken thighs
6 oz. mushrooms 4 tsp. butter or margarine 1 lb. ground or finely chopped chicken thighs 1 1/3 cup bread crumbs 1/2 tsp. nutmeg 1 tsp. salt 1/2 ground pepper 3 eggs, separated 4 tbsp. flour, for dredging 4 tbsp. oil
Chop the mushrooms finely. Melt the butter in a frying a pan, and fry the mushrooms for five minutes, until the juices have evaporated. Mix the mushrooms, chicken, breadcrumbs, yolks, nutmeg, salt, and pepper. Beat the egg whites until stiff. Mix half the whites into the chicken mixture, then fold in the remainder.
Heat half the oil in the pan. Form the mixture into 12-16 meatballs, about 1 in. by 3 in. Dredge them in flour and fry half of them for about ten minutes, turning them regularly to get them evenly brown. Repeat with the remaining oil and meatballs.
