arborio rice
[1]grape tomatoes
[2]acorn squash
[3]golden raisins
3/4 cup arborio rice
1 1/2 tbsp olive oil
1 cup chicken stock
1 1/2 cup water
1/2 tsp salt
freshly ground pepper

[1]10-15 basil leaves, coarsely chopped
1/2 cup grated parmesan
[1]10 grape tomatoes, halved

[2]1 acorn squash, baked and mashed
[2]2 tbsp brown sugar
[2]extra 1/4 tsp salt

[3]2 tsp paprika
[3]1/4 cup golden raisins

Heat oil and fry rice for 2-3 minutes until lightly browned. Add stock, water, salt, pepper to taste, and [1]basil [2]brown sugar [3] paprika. Cover; bring to a boil. Reduce heat to medium-low, and simmer 15-20 minutes until most of the liquid is absorbed. Stir in cheese and simmer a few minutes more. Remove from heat and add [1] tomatoes [2]squash [3]raisins. Garnish with more parmesan.
