arborio rice parmesan basil grape tomatoes acorn squash golden raisins
3/4 cup arborio rice 1 1/2 tbsp olive oil 1 cup chicken stock 1 1/2 cup water 1/2 tsp salt freshly ground pepper 10-15 basil leaves, coarsely chopped 1/2 cup grated parmesan 10 grape tomatoes, halved 1 acorn squash, baked and mashed 2 tbsp brown sugar extra 1/4 tsp salt 2 tsp paprika 1/4 cup golden raisins
Heat oil and fry rice for 2-3 minutes until lightly browned. Add stock, water, salt, pepper to taste, and basil brown sugar  paprika. Cover; bring to a boil. Reduce heat to medium-low, and simmer 15-20 minutes until most of the liquid is absorbed. Stir in cheese and simmer a few minutes more. Remove from heat and add  tomatoes squash raisins. Garnish with more parmesan.
