Batter: 1/2 cup flour 1/2 cup milk 1/4 cup water 1 egg 2 tsp vegetable oil or melted butter 1/4 tsp salt Filling: 6-8 oz cream cheese 2 tbsp sugar 1/4 tsp vanilla 1/4-1/2 tsp lemon peel oil or melted butter for frying Optional: 1/4 tsp cinnamon and up to 1/4 cup raisins OR blueberries or other fruit
Mix batter ingredients until smooth and creamy. Lightly oil pan or griddle, and ladle about 3 tbsp batter out to form a crepe, spreading to get a broad, even coat. Cook until the edges start to crisp or turn up, then flip and fry a few seconds more.
Then remove and set on a plate. Repeat about six times, using up all batter.
Mix filling ingredients and put 2-3 tbsp in the center of each crepe. Fold over one side of the crepe, sticking the pancake to the filling and flattening. The fold over the ends and the other side. Fry in oil, starting with the folded side down, until both sides are brown.
Serve with applesauce, sour cream, and/or powdered sugar.
