celery onion 13 oz. can evaporated milk 1 lb. shrimp monteray jack cheese
1 rib celery, chopped 1 stick margarine 13 oz. (1 can) evaporated milk 2 egg yolks, slightly beaten 1 lb. shrimp 1/2 cup grated cheese (monteray jack) 1 onion, chopped 1/4 cup flour 1 tsp salt 1 tsp cayenne pepper
Saute shrimp, onion, and celery in margarine until tender. Add flour slowly, stirring constantly. Add evaporated milk and continue stirring until mixture thickens. Add salt and pepper. Beat a a little of the hot liquid into the egg yolks, then return egg mixture to sauce, stirring constantly.
Pour into greased casserole dish, top with cheese, and bake at 325°F for 25 minutes.
