4 medium sweet potatoes pecans
4 medium sweet potatoes 1 cup milk 1 cup sugar 1 tsp vanilla 2 eggs 1 tsp salt 3/4 stick (3 oz) butter 1 cup pecans 1/2 cup flour 1 cup brown sugar
Wash sweet potatoes and bake at 375°F until fork tender, about 30-35 minutes. Slice them open and scrape out the flesh.
Add sugar, milk, eggs, vanilla, and salt. Mash (it's ok if there are small lumps).
In a separate bowl, add brown sugar, chopped pecans, flour, and butter. With a pastry cutter or fork, mash together until thoroughly combined.
Spread the sweet potato mixture in a regular baking dish, then sprinkle the crumb mixture all over the top. Bake at 400°F for 30 minutes, or until golden brown.
