spaghetti garlic cherry tomatoes feta cheese fresh basil kalamata olives
4 oz. spaghetti 1 garlic clove 2 tbsp. olive oil 8 cherry tomatoes, halved grated nutmeg salt and pepper 3 oz. feta cheese 1 tbsp chopped fresh basil kalamata olives
Cook the spaghetti in plenty of salted water and drain well.
Mince the garlic and heat with the olive oil 1-2 minutes, then add tomatoes. Fry the tomatoes 1 minute, then remove the garlic and discard it.
Toss the oil and tomatoes with the spaghetti, then season with nutmeg, pepper, and salt. Stir in the feta and basil, and adjust the seasoning if necessary (remembering the feta can be quite salty). Serve hot, topped with the olives.
